It is hot in Charlotte! But the staff at Auston Woods, luxury apartments in Charlotte, NC, would like to share with you some of their favorite homemade treats to help you keep cool this summer.
Root Beer Floats
This is simple to make. A couple of scoops of vanilla ice cream, add your favorite brand of root beer in a tall glass, grab a straw and long spoon and enjoy. We love Uncle Scott’s all natural root beer made right here in North Carolina.
Looks cool and tastes great, both kids and adults love this treat
- 1 3/4 cups water
- 1 cup sugar
- 4 kiwis
- 1/2 cup (about 4 limes) fresh lime juice
- Make the syrup: Combine 1 cup of water with the sugar in a small saucepan and bring just to a boil. Set aside to cool.
- Make the ice pops: Using a paring knife, cut kiwis into quarters, peel, and remove the white core and seeds from each piece. Place the seeded kiwi pieces in the bowl of a food processor fitted with a metal blade and purée to a liquid — about 1 minute. Combine the puréed kiwi, 3/4 cup syrup, lime juice, and remaining 3/4 cup water in a large bowl. Pour the mixture into molds and freeze until solid — about 6 hours.
Watermelon Popsicles - do the same as above but swap out the kiwis for 2C of water melon.
Chocolate-Dipped Frozen Fruit
Combining chocolate and any type of fruit is always a crowd pleaser. You can use grapes, strawberries, raspberries, bananas, oranges, any fruit you want. Dip the fruit with a toothpick into melted chocolate, then place in the freezer for about 30 minutes. Enjoy your chilly, sweet snack.
Fruit Juice Ice Cubes
Pour fruit juice into ice cube trays and freeze. You can use these in water to add a touch of sweet flavor, use in soda, or eat plain.
